Okra fried/Ladies finger fried/Vendakka fry

Okra is marinated and fried like fish.This is an easy recipe one could make on a really busy day or tired day.

Okra fried is a tasty side dish with chappathi or white rice  and dal .If u don't like okra because of its sliminess then try this one .Okra's water content dries up and becomes crisp and then smell of the dish is really tempting.

If you ask me, I don't mind okra being a little limpy and soft I love it any form .

Ingredients

Okra/Ladiesfinger/Vendakka-10
Chili powder- 1 tsp
Coriander powder-1 tsp
Turmeric powder-1/4 tsp
salt to taste.
Chat masala or Tawa masala -1 tsp (optional,I use MDH brand)

Method

1.Wash and pat dry okra I do not cut off ends as it gives okra better stucture .Make a long slit on one side of all the okras,make sure u don't cut the bottom side of it or the masala will flow out of the okra once u put in oil.
2.Mix the rest of the ingredients adding few drops of water to make it a very thick paste.
3.Take a pinch and fill it inside the okra .Fill till u can .Do not tear or break it.Repeat for all okras.Set aside for half an hour.
4.Heat two tsp oil in a non stick pan and put the masala slit side up and fry one side of okra .When one side is crisp turn it.Just like u fry fish.
Serve hot.

Note 
I have given approx measurement of spice u will have to take more spices if the okra is big.
U can play around with recipe and add any native spice of ur choice

Is this not an easy recipe ?But you know what!I messed up on this recipe the first time I made.Can u believe it ...I don't know what I was thinking when i mixed up the spices i added so much salt that we could barely eat it.I had to throw it away.Ya it was long long time back but  those flashbacks do rush into my head every time   I plan to make okra fried :))

  2. You can even add peanut powder to the masala, I sometimes mix peanut and roasted dry coconut and that would b another tasty version... Of course not on a tiring day :)
