Bhindi Sambhariya / Okra stir fry with raw coconut / no onion no garlic recipe

Crisp bhindi /okra mixed with so many nutty flavors going on in the mouth, it tastes simply awesome. This is the easiest dish I have prepared in a long time. The okras/ ladies finger is shallow fried (u can fry until crisp too) then the peanut, cashew nut and sesame is roasted thats all everything else is added raw.

Usually the bhindi is stuffed but here all the masalas end up coating on the outside of the thin ladies finger and I just could not stop myself from snacking on it...With the relentless summer heat I am sure standing near the stove and cooking for hours is the last thing you want to do. Here is something u can whip up in minutes.
 If you are looking for not so time consuming party food to make in bulk then this is really great one to try. Also ideal for vrat ka khana.




The recipe is adapted from Vah Chef . Here is a little trivia- Bharwan means filled /stuffed and sambhariya means stir fry in Gujarati recipes.Thank you Linsy for that info. I love Gujarati food.

Ingredients:
Bhindi /Ladies finger / Okra -250 gms
Dry roast
Cashew nuts -10 broken into two
Sesame seeds - 1 -2 tsp
To sesaon:
Chili powder - 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/3 tsp
Peanut  - 1/2 cup (Roasted and powdered)
Amchur powder - a pinch
Garam masala - 1 tsp
Coconut fresh grated - 1/2 cup
Coriander leaves- a small bunch chopped
Sugar -1 tsp
Salt to taste
Goda masala -1 tsp (I have not used it here)

Method:
Wash the okra well and pat it dry completely (Do not skip wiping) I keep it on a paper napkin while I do other chores.
Cut off the top and bottom ends. Make a slit from top to bottom in each okra. Apply salt on the inside of each.
Shallow fry the okra in 3-4 tsps oil until crisp. Add the roasted cashew nuts sesame seeds .Switch off flame and immediately add chilli powder,coriander powder and Turmeric powder mix well then add amchur powder, garam masala, coconut ,coriander leaves salt and sugar.Mix until well combined. The oil on the okra will grab all the masala beautifully.
Serve along with roti, jeera rice etc. (**But after mixing serve immediately do not keep for too long )

Note:
If you are planning it as party food  use dry grated coconut. Otherwise everything will become soft as it sits.

  4. wow...it looks awesome...I have never tried it.... but my fridge has lots of okra in stock...and as u said easy cooking for summer is what I am looking at.. so I am gonna try it...super easy it sounds...and thanks for sharing that gyan ...I never knew the difference between sambhariya and bharwan :)
