What is your thought on the warm banana & cinnamon scent wafting from your kitchen on a cold morning ?
Would you like to let it go or would you let it stay for a while ..well I would love to hold on. On the note of holding on how old do you think are these pics? Exactly two years. ... Thats right since 2013 Jan :)).... Not that I forgot about them but I just love the mood of the pics and love looking at them if I may say so. I know there may be many technical flaws in it :) but that was the first time I tried shadows (from the maple tree just outside my window) and really liked the effects.
Ingredients:
Ripe banana( smashed)-1
All purpose flour- 1 1/2 cups
Melted butter-1/3 cup
Sugar-1/3 cup
Egg - 1 beaten (substitute it with 2 tbsp yogurt)
Cinnamon powder - 1 tsp
Baking soda - a small pinch
Walnuts (toasted or raw)- 1/3 cup chopped
Method
No need for a mixer with this recipe.
1. With a spoon, mix butter into the mashed banana in a large mixing bowl.
2 .Mix in the sugar, egg and cinnamon powder.
3 .Sprinkle the baking soda in the mixture and mix in.
4 .Add the flour, mix until it is just incorporated. Fold in the chopped walnuts.
5 .Pour mixture into a prepared muffin tin.
Preheat oven to 350F and bake for 25-30 minutes. Insert a toothpick into the center of a muffin if it comes out clean, it's done. Cool on a rack.
Serve with a warm glass of flavored milk.
Note:
Do not over mix as the muffins will become dense.
After adding baking soda bake immediately do not keep batter for long.
**After adding banana and egg etc if u think the batter is too runny add a tbsp of flour to make it right consistency. The recipe is quite forgiving.
Preheat oven to 350F and bake for 25-30 minutes. Insert a toothpick into the center of a muffin if it comes out clean, it's done. Cool on a rack.

While typing the post, I was literally getting the smell of the banana and cinnamon... hmmm... this pics do look different from your recent ones, yeah, you have developed a lot! :) but the shadows give it a nice moody effect... awesome muffins...
