Every time I cook this my man and my daughty make many rounds to the kitchen.Yes it is a fast disappearing item.
My dad had an exporting business when I was in school and I remember him bringing home huge.. huge.. slabs of export quality frozen shrimp/prawns of all kinds.Mostly tiger prawns.All our near and dear get a portion of it still there would be so much left .Gosh so many different dishes are made out of it.
Dad was an exemplary cook who believed that adding too much spices spoiled and masked the taste of seafood.He loved to just season the shrimp(chemmeen)with little bit of salt and pepper and tender cook it .I loved it very much but I guess u need to have a liking to eat seafood like that.
Coming back to my way of frying shrimp...
Ingredients:
Kashmiri chili powder-1 tsp
Turmeric powder-1/4 tsp
Salt to taste
Onion -1 cut into thick slices,separate each petal.
garlic-3 flakes
whole red chili flakes with seeds-1 tsp
Oil-1 tbsp
Method:
1.Marinate the cleaned and washed shrimp with Kashmiri chili powder,turmeric powder and salt for atleast half a hour.
2.Heat oil in a non stick frying pan and fry shrimp in batches so that there is enough space in between them while frying.Each batch will take only 4 to 5 minutes.Then remove from heat and keep it aside.
3.After all the batches are done fry the onion in the same oil slightly so that its crunchiness does not go off.Remove and keep it with shrimp.
4.This is the best part so DO NOT OMIT THIS STEP ..Crush garlic and chili flakes to kind of coarse texture and fry in the same oil as the raw smell of garlic goes a sweet aroma starts to come then toss in the shrimp and onion and give it a good stir .Remove from flame and serve it hot .
Note
Adjust spices according to your taste.The shrimp may look fiery hot but it is not.
Do use non stick pan otherwise the dish will become really oily .
Do not overcook shrimp as they become hard .
How to know if shrimp is done?
Most home cooks can say just by looking at it but if you are not there yet don't worry it is easy .Shrimp curls and tightens up as it cooks.Try to cut apart a shrimp after a few minutes of frying ,with a spoon and it should slide through without any effort.
