Savory Semolina Cake is an excellent option for a filling breakfast.
Semolina cake is the easier version of traditional Gujarati snack Handvo which is served for breakfast or evening tea. This recipe forgoes the use of lentils (traditional recipe involves soaking ,grinding, fermenting overnight etc) and so becomes the instant version concocted by Anjum Anand to make life easy.Thanks for the recipe Priya!

Ingredients:
Semolina / Sooji /Farina - 1 cup (I used coarse semolina u may use fine too)
Vegetables -1 cup ( carrot - grated, frozen peas thawed beans chopped)
Ginger - 1 heaped tbsp grated
Green chili chopped
Red chilli powder- 1 tsp
Turmeric powder-1/3 tsp
Yogurt -3/4 cup (Keeps the cake moist)
Water -1/2 -3/4 th cup
Red chili flakes- 1/2 tsp (optional)
Cooking oil - 3 tbsp
Mustard seeds- 1 tsp
Cumin - 1 tsp
Curry leaves
Soda by carbonate/Baking soda -1/2 tsp or (11/2 tsp of baking powder mixed with lime juice 1 tbsp)
Sesame seed - 1 tsp
Salt to taste
Method:
1. Mix semolina and yogurt keep aside for a few minutes ,vegetables, ginger,green chili ,red chili powder,turmeric powder,red chili flakes,salt to taste.Add water just enough to make it into thick yet scoop able batter.
2.Heat cooking oil when almost hot add mustard seeds when it crackles add cumin seeds remove from flame add curry leaves. Add this to the semolina mix well.
Just before putting batter into the well oiled pan add soda by carbonate mix the batter quickly.(After adding the rising agent do not keep the batter outside for too long or the bubbling action will get over quickly and the cake won't rise)
Level the top and sprinkle the sesame seeds on top.
Preheat oven to 400 F and bake 30-40 minutes.Until cake tester comes out clean.
Let it rest for five minutes then transfer on top a wire rack .
Cut and served immediately or at room temperature with mint chutney or ketchup
Goes well with Indian chai./Black tea / Black coffee.
Note : Cake is crumbly when warm so let it cool off before slicing.
Use grated /finely chopped veggies like cabbage, beans etc.
